Marrowfat peas through the dryer.

What with storage logistics and trying not to get to many claims on quality, it looks like the peas will probably have to go through the dryer this year. Planning to cut them slightly early to avoid bleaching, but store them with pedestals in for a week or so until there's space to get them through the dryer.

What temperature is best to dry peas at? Anything else I should be thinking about?

Good idea to put them on the floor and get some air through them. They will even up a bit before you put them through the drier. I would dry them slowly with not to much heat to prevent them cracking. Chain conveyors will split them to I have found, so the less they are put through the system the better they will be. Not always possible I know.
 
Be very gentle with your hot air & pea temperatures, as cracking/splitting can be a problem if you get over enthusiastic. Always budget for two passes.

Definitely avoid chain conveyors. If that is impossible, make sure they run as full as possible.

Ambient drying on a floor is also awkward as there are so many air gaps (due to high particle size).
