We have been carrying out some mid teir coppicing work over the last few weeks , one local gent( who is obviously not chuffed about it) has been driving by slowly several times taking pictures!
I'm not too bothered myself but the rest of my family aren't too impressed,
How do others deal with such situations?

Feign being distracted by his presence and pretend to lop off a thumb, or "send" your billhook or woodhook into a shin.

That'll make him think about taking photos without permission...

I get this when hedge coppicing. The ignorant ones assume we're removing them altogether. Luckily, we've been doing it often enough that the longer term locals soon put them right. When we get the odd question from a passer by, I can point towards previous work & show what the improvements look like later on. It's just ignorance & assumption. Rise above it but don't assume a stupid question warrants a silly answer. Farming's PR is bad enough already.

I agree with @Brisel . When I was with Sentry, we did lots of hedge work and conservation. You used to be able to print posters from Defra website which I would laminate and attach to the fence near our work. It explained what and why we were doing it. Locals really bought into the idea and some even offered to help!
Educate not punch may be the answer!

how do you know he's not chuffed? i'd go and engage with him.
It's tedious sometimes, and there are some who're convinced you're doing a wicked thing...but i'd advocate trying to to explain.
A lot of em really have no idea about UK woodland all being managed, or that UK farmland has to be constantly kept clear.

If he's adamant....give him advice involving travel and procreation.

It would have been better if this chap had actually stopped to ask what we were doing ,
Its the drive by pictures that are annoying , especially when my girlfriend and son are out riding their ponies !!

I can tell he's not happy ,
I'm always happy to explain what we do and most neighbours are fine and happy to chat
