I’ve Seen a couple but can’t figure out which would be the best angle.

Without knowing much about them, why can’t you make the ‘bottom pin’ held in with a bolt or two, and get another set of holes laser cut in the plates?
Then you can alter it easily if needs be?

Absolutely no reason you can’t, if you’ve got the right Quick hitch use a set of bosses on each set of holes job done. Certain Quick hitch’s tho the bucket ears won’t go up high enough passed the Quick hitch body to get to the bottom set of holes.

What attachments are you wanting to use? A big bucket? If so mount your head stock to the bucket and offer the digger up to it it will be less critical than you think to get the angle perfect as a digger has a lot greater range of movement than a loader ect it’s just trial and error really stick one mounting pin on with thin material then put another on the same and keep moving things until it’s right then make a cardboard template and transfer to plate after

Probably best with your dipper fully reached out and quick hitch crowed right up then get the bucket propped into a decent crowded position that will give you the best idea of position for your pins
