You can get single phase from three, by connecting the motor across one phase and the neutral, as the other posters say, but you need to be careful not to overload the rate of the phase. Houses are supplied with single from a three phase supply but the installers are careful to match the demand across all phases so that they are roughly equal.

Doesn't need to be a huge socket - 32A outlets are quite common; 63A is medium sized & 125A is huge!

Not that simple! 30 amps is presumably running load, starting load will be far greater.
