Starting ice cream

Hello
I'm looking for some help from people who have started an ice cream diversification with their milk. I've talked to a few people but everybody says something different.

I need to know everything about setting it up in a sort of step by step guide;
What machines I need, where to get them, how much are they (roughly), what health and safety/food hygiene tickets I need, any other legislation I need, what do you need to do if you want to sell through restaurants or shops, what about selling privately from a van or stall?

Alternatively if anybody has set up and would like to help can they email me to discuss further.

I'll second RSS of Hereford for advice on equipment and start up.Also Colin Steer at Colsan. But remember they are in business to sell the equipment.
As with all milk processing it is relatively simple. The skill is in achieving consistancy and quality which comes with time and experience. The hard work starts when you've got to sell it, again and again.

You'll need to get environmental health and trading standards on side. Both through your local council.
Your market will vary. Where are you? Edge of town? tourist hotspot? Ironically selling direct to public is probably more straight forward than b2b
Don't underestimate how much of your time it will take up. As with any project there are time lags associated with co-ordinating things. Equipment; knowledge; website; relevant registration; packaging; marketing; finance; Don't do it just because there's a grant involved. It must stack up without. Do your figures. Then if a grant fits in its a bonus.
Without doubt, real dairy ice cream is gaining market share once more, as quality is being recognised by the growing number of foodies out there. That quality starts with your milk and cream.

I used to make Italian ice-cream and sell from the farm 20 years ago (still known as the ice-cream lady but slowly moving over to the goat lady!). Go for Carpigiani kit and go to RSS hereford who will train you well if they are as good as they were. if you have spare pennies, try and visit Italy and eat ice-cream wherever you go to know what the top quality tastes like.

yes yes yes couldn't believe the quality when I visited a few years ago
