Too high for rabbits; no sign of deers.

The owner thought it was my sheep, so I took them out and the problem has got worse.

No footprints at all in the field that we can see, so obviously not a very big animal.

I would suggest wrapping with a sticky band to prevent any further nagging and to help the tree recover ,,if you get anymore ,you might find some evidence ,,mount a trail camera and see whats about

Look round the edge of the field to see if there is a track or trampled place where the mystery beastie gets in, and where a hoof print might be more visible if it is deer. I'd put my money on deer as well.

@Kidds is this an apple tree? Nothing like mine, but I would be certain the damage is by sheep/ deer/ hare. The tree is fooked as it is ring barked
