How about you let her know what days you are shooting and she can decide if she wants to move her sheep from "certain" paddock for those days...
is it worth buying her a box of tissues just as a token gesture .........the lady sounds like she is suffering from anxiety from your description of her being in tears....logic will only work to a point i'm afraid

I graze on a shoot with 300 bird days 5 days week with no worries
