If it's weed infested I'll use it but otherwise I have always found enough dry days (or nights). But we are in the dry east with small acreage and big combine.

There you go , we need wheat off by the end of august ideally , this farm grows grass for fun late harvests aren't helpful.

I will let all but 2 bits ripen naturally and they have some BG regrowth in them and are none milling varieties and will prob give it 2 weeks to start killing The Bg

Tbh David I'm getting tired of cutting wheat in september , and we're off somewhere to warm up (y)
then grow early varietys the spread of maturity is very wide from the earliest galant grafton to the latest couger ect
on moisture retentive deep soil the spread is 2 weeks on light land it may be only 3 days and in a dry year non at all

imho on a deep late soil the early variety costs 5% less in overall cost

I had a look at my wheats today belepi is ready now and jb deago is a week to 10 days away, it's grain is hard and it rubs out easily but the straws still a little green.

Deago also has a better sample,

They're both in the same field, I ran short so drilled belepi on a headland.
