Clean beef just isn't good enough compared to cull cow prices!

Im hearing talk that cull cows base may go to £3.15 for next week.

Liveweight trade for both clean cattle and cull cows was easily up another 5pk+ at the start of this week, clean cattle deadweight need to rise!

Store trade defies belief currently, Sedge on Sat averaged well over £1000 head for all steers in the store ring and that includes poor P grade Fri steers!

Why does clean beef need to rise?
Surely the reason cows are so dear is because of the high demand for cheaper manufacturing meat (mince) for burgers.

Unfortunately or perhaps fortunately clean beef doesn't make the best mince for burgers especially very young cattle.
Arguably those big ugly old friesian steers ought to be dearer as they are mostly minced as well.

Clean beef needs to rise for several reasons and if you don't know what they are then im truly shocked frank the wool.

Do you know how much of each clean beef animal is minced on average? its more than you will realize.

56% roughly but it needs blending with cow mince to make a good burger for the likes of McDonalds.

My other comment on the price of clean beef was "tongue in cheek"!

The clean beef price needs to rise because at the moment finishers cannot pay the breeders and rearers of quality beef cattle enough for their cattle to make their production sustainable, although they are trying their very best at the moment in my honest opinion.
If the price does not rise, then in the medium term and beyond the processors will not have the cattle they need to maintain their businesses and they will fold themselves.

I’ll stand corrected but don’t think McDonald’s will use cow beef...nearly all friesan beef

It is very difficult to make good burgers without a blend of older leaner meat. Very young beef tends to be soft and seems to have a higher water content when you cook it.
It is even more noticeable with Lamb Burgers, they need to be made from hoggets if not mutton.

On the price of cows versus clean beef perhaps we should remind GUTH that the market is working and it is supply and demand. Similar in fact to what is happening to the finished lamb and hogget market.
It does make you wonder where the prices would be without markets!
