I need hand brake discs and I was wondering if I should change hydraulic pump on massey ferguson 3060 at the same time when I have to change oil and filter

Put a test gauge on the tipping spool before you take it to bits, test both when cold, and give it some work to get it hot and test again, that will tell you if the pump is worn,
I not sure about the pressure it should be, at at guess 2500 psi minimum, maybe 2800 psi, @Gapples might know

I don't know exactly for an MF but you'll not be far away at 2700/2800 psi.
To test the pump accurately though you'll need a flow test.

First thought is if it's working why bother. But having our 6150 chew the outer casing putting filings all round the hydraulic system. It may make sense. It took days to get it working properly as the filings wereall round in pipes valves and steering orbital unit. I would be tempted if it's never had 1 and done over 6k hours. Depends on the price but I think ours was about £300

Unless its down on pressure I wouldn't bother. It doesn't need to come off to do the handbrake discs. They can be done through the left hand side cover.
