Getting signed off is very easy, it’s when you start processing stuff and supplying to trade it becomes more involved.

if you have dsc1 was it whilst the large game meat hygiene was still included ?
You will have trained hunter status to inspect, so it will be pretty much transport and storage they will want to know.

most really not very onerous the first step and well worth doing

Yes you should be even under the hunters exemption I believe, though there will be suffering degrees of food business status etc

I was told there is a course online for about £35. but i did not think this would be good enough to count for anything.
As i need to learn to butcher and skin a deer first as i was not shown this yet.
 
As above, the exemption for food registration only applies for in-fur carcasses. The link to FSA guide is:


There is a subtle difference in terminology which catches people out. Wild game refers to a whole carcass. Wild game meat is a carcass which has been prepared (skinned, cut, etc).

Then you really need to be taking that as an additional course, I believe Lantra offer them.

technically it would depend on if they are in fur, and are they friends ?your not supposed to even give them away if you have done anything further than a field gralloch, ie, skinning, or butchery. personal and family consumption only.

As per T.Eddie, if you want to talk through it, feel free, or pop up if you wanted, although he would obviously be closer for you.

best bet would be to call EHO at you local authority, they are surprisingly helpful (even if they don’t always understand game meat regs)

Take a look at wild game guidance as it lists every scenario on there and tells you what you can and cannot do (most EHO refer to this as they often don’t know).


you do NOT need to know any butchery or skinning to be registered, obviously if your planning to send it on it is advisable.
What you do need to understand is hygiene, cold chains, food hygiene and record keeping, its honestly all common sense.

Scott rea videos are a great place to start there's also lots of videos from the states of people skinning/ breaking down/ butchering. The bearded butchers are really good to watch

I wouldn't do an online butchery course personally as something like that that I'm paying for I'd want to be hands on

Online course that is worth doing is level 2 food hygiene. It's about 20.00 does take long but the EHO will be happy you have it

The thing to cover you will be your haccp which is your risk assessment that will be signed off by the council. But the food hygiene and trained hunter status will support the process as well as show the eho you know what your doing

For some butchering experience, ask a local butcher if he will show you on a carcase you supply to him and share the meat with him. I had a mate who was a butcher and that is what I did in the early days, as well as watching a few Youtube videos first.

I live in south east London /Kent border do not know any game butchers around me but will try and find one (y)
A normal butcher should be able to do it for you mate, the only thing they won't usually do is take a carcass in the fur. So would require skinning before hand and then transporting. I've done this in muslin cloth sacks (put a whole Chinese water deer in one) that I skinned as soon as I got home so it was still cooling down, then straight to the butchers.

You guys are so lucky i live near jnc 3 M25 and all the deer areas are taken i have a perm along A21 area .
But the deer are the other side and about 3 miles away have been waiting for over ten years for them to move in.
But they would starve to death as nothing grows some hops and skinny sheep brought as a hobby farm for a top barrister family.

The farms I shoot on are not super populated with deer either and small numbers dot about mainly roe and muntjac occasionally fallow come through.however this allows a more management style approach as opposed to a take as many as possible option

Some land owners want them removed all together but as you say if they are then managed what is the problem and should be left for the farmer and stalker to agree .
As you seem to have done well done why wipe out if you can control them. (y) (y)

Tried leaving food and salt but nothing and calling.
The only thing that moves are spitfires flying overhead went out again on Sunday 4 hours see nothing yet again.
Rabbit or foxes or any birds not even a tree rat
