they do make a difference to the steering we put them on ours and wouldnt go back. Does make it higher at the front so doesnt look right balanced

Wider fronts do make a big difference. A set of wheels off a John Deere trailed mower should bolt straight on, they are the same style of rim and you should be able to get 3 rib 11.5/80x15.3s on them that won't be much taller than 7.50x16s.
