If it’s anywhere near ready I’d be taking it off but that just me

Ready as in cheesey or for milling through harvester? If wanting cheesey stage it's either ready or not, not a big window to get it off.

Wait for cheesy stage. It’s higher dm and dries the soil a bit too anyway.

Rounds 25 delivered and 25 out of the field locally but all spoken for I heard today

Onless there's a slap of rain forecast, I'd hold fire. An odd shower won't do it any harm. If you're using a contractor, availability is also a consideration, so have him well primed.

I’ve sold winter barley rounds at £20 out of the field, same price and customers as last year

Think I'd hold, only needs a couple of hours drying before you can get started anyway and gives decent enough next week.

470kg @€70/bale = €149/ton or £127
