Yes it will be dry the next day (even less in good weather), unless you get a run which is unlikely in primer.
It dries a lot quicker than the top coat.
Have you a sander to help with the big flat areas on the bonnet?
80 grit to get rid of that surface stuff, not sure what it is ..........

Only way to shift the pitted bits would be a grinder, but if you do that, you will probably have to use filler, or you'll see the marks.
you could try filling the pits with primer, sanding until flat. Use as little thinners as possible and a narrow fan on the gun to get the primer on so you have something to sand. Some would use a roller for this, or even a brush, but they will leave lines through the primer.
Nothing like a deadline .................

If you want it flat and shiny (which old tractors never were) you need to do what you can with a twisted rope wire brush on an angle grider (mask & gloves are essential!)
Wipe on a coat of kurust or similar (Halfords sell the Loctite version IIRC) with a cloth not a brush so it dries quicker.
A thin coat of etch primer (Halfords sell rattle cans of it)
Then a coat of filler primer, quick rub down and then another. Rub down and that should see it flat and ready for top coat. If it is seriously pitted you might be better using actual body filler but water it down with fibreglass resin so you can just skim it over thinly. This works very well but does take a little practice.
All the above can be got from Halfords, it's not where I would get it from but assuming you have a Halfords shop reasonably close it helps a lot of folk out.
A proper car paint shop would be my choice and you will often get very good advice from them.

Heat the shed you are working in to get the stuff to dry and above all else always wear a decent mask, this stuff is really bad and when it gets you there is no going back.

As Kidds says, wire brush in a drill or grinder attachment, get as much rust out from the its as you can (I would have had it shot blasted) I would then give it a "skim" of easy sand filler in the worst of the pitted areas. Rub it down and fill any that are still showing. Then on with your primer, flat (with guide coat) then on with the paint. Filler will go off very quickly with a bit of warmth, you should have it all filled/primed up in a day easy.

Can you get a lend of a bonnet, or go for the before restoration look?
Not sure how you will get all the rust with a wire brush, but worth a go.
Don't start stressing trying to get it finished, but that's easy for me to say .........
