Yes. No. Personally would never use them.
I presume you mean these?

We use them on pheasant drinkers. Ours have a tap (like a slide) on each one. No good for mains pressure, but other than that great, we've used them for years.

Yep . Have used them several times to connect to 3” main . Can’t find a picture of the ones we use , but they are brass plates and 25 mm t off. Work well no issues. Get them from a big plumbing wholesalers in Bellshill
Conincidentaly I was in there yesterday getting a special fitting for an obscure alkathene pipe. It's my go to place for those fittings that the local stockists will never have. As the man on the counter says, if we don't have it or can't get it you'll not get it anywhere else. Frazers it's called.

Frazers also have a branch in Dundee and sometimes handy although Pipe stock are very good and often a better price . Last fitting from Fraser's priced at about £82 was done by another fitting from Pipe stock for £12.73 , and delivered next day
I would squeeze the pipe , The self cutting saddles don't have a big flow and would depend on the amount of water you need I suppose
