When lambing outside why would you put sheep in such a large field, I would fence it off into small paddocks make catching that sheep a lot easier,

If lambing in a bigger field then good dog/dogs and a corral system leading to a few small pens make life easier.

My old dog from a few years ago was a dab hand at grabbing a ewe against the fence and holding her for the shepherd to catch. He was a big, powerful, heavy dog and he would anchor himself against them. Lambing time was he only time he would do it as well. He would catch a ewe without being told, but at any other time of year I'd have to tell him to catch a ewe.

now never said anything about putting that amount of stock in one field, smaller paddocks stocked with a more manageable number, less stress on the farmer for a start and most important less stress on the ewe and her lambs.

I know it's how it's done and works, I will leave it at that

Everyone up here that has big hill flocks, their fields are just flooded with sheep come lambing time when they are all home onto grass, ideal scenario would be what your suggesting, but if they were spread out there would never be a clean field on the place with a fresh bite for them.

You should see the fert applications to keep them going in May until everything is away to the hill again!

Pretty sure they don't lamb a high percentage of the ewes, as opposed to many lowland flocks that will intervene in over half. Also pretty sure that a lot of their ground is hill so not so many fields to mess around with. They could do with a catching dog all the same, it would make life easier
