That is your employer's problem. You are entitled to your holidays and it is down to your employer to arrange adequate cover in order that you can take those holidays.
With the caveat that employers can stipulate that annual leave cannot/may not be taken at a busy time of year. We state March in our employees' written statement of employment particulars.

It's use it or lose it, I don't think the employer can buy it off you. But with enough notice you should be able to take it. We try to encourage employees to mark their weeks off in the calendar at the beginning of each holiday year, even if they are shuffled around afterwards.

I’d just like to say this is in no way a moan I’m happy with my job an my employer I was just asking what others do ie do you get paid for unused holiday , lose it or take it or perhaps they roll it over to next year , I’m well aware of the fact it’s my bosses job to arrange cover and im also aware it’s my duty to book holiday but sometimes it’s not as simple as that especially when livestocks involved.

Approx 25 years ago I was in a similar situation. Awful boss who made it practically impossible for me to take the holidays I was entitled to. Only upside was I was on a basic salary and commission, so was well paid for the work i did. Downside was that I was burned out in three years, The last firm I worked for was great. They had a generous holiday entitlement and paid you for any time not taken at the end of the year. Two extremes.
Much as you enjoy your job, it seems that your boss is taking advantage over holiday entitlements and either needs to provide cover so you can take time off or agree to pay for holiday that you haven't been able to take due to lack of cover.

Getting paid for unused AL always seems to have been very difficult in my experience but rolling over a certain amount (up to 12 or 15 days) each year, has never been a problem.

It’s likely I lose them as I can’t take them and employer won’t pay for them
I live in the Netherlands, so they might not be possible for reasons unbeknowst to me but hey, here are some of my thoughts.
-Let your boss pay them out cash off the books (overhere working more hours then your contract is not great taxwise so paying them on the books leaves you working for less per hour).
-Pay them out in some other way like tools or bricks for your house, something the company can claim tax on maybe so you can get more bang for your buck.
-Take the days off the next year without officially booking them (so you are effectively rolling them over but without the hassle).
If the bossman doesn't want to help you out with it in any way it is time for you to take the rest of the year off or you are effectively working the rest of the year for free.

When I was employed I kept my own account of hours, just booked 40 hours a week and took days off throughout the year when it worked for us both. Takes some trust in eachother through.
