When the grain is at the "cheesy" stage this is when you can squeeze the grain between fore finger and thumb and a white goo comes out of the grain. Seriously consider using an inoculant.
The grain should reach full size before it's fit but before it goes hard. If you pull off the outer coating of the seed, the inside of the grain will be white
and have a texture similar to cheddar cheese.

Spring sown wheat for wholecrop would normally have been coming off for the past week but it's all a bit late this year. We had quite a few orders for inoculant to treat wholecrop barley over two weeks ago.
