Drilled a cover crop on 7 th may (30kg oats 20kg vetch) vetch just coming in to flower oats just starting show what would be best timing to spray off and how long can I leave it

What is it going into next and when do you intend to plant that? I would be tempted to leave the plants to do their thing and then harvest your next cover crop seed mixture before planting the next crop.
