The reason for the reduction is because yellow cheese prices have fallen in Europe, which is having a knock effect on prices in Germany in particular. Even more frustrating is that the market is still fundamentally strong, with demand above supply. This dip in the yellow chese market has come just at the wrong time in the German market. Yellow cheese has fallen because of over production. Less butter has been made resulting in very high butter prices, but it has been less attractive to make because skim is low in value because of the expectation of the EU stock coming on to the market.
