That's really helpful - cheers!Fridge units at that time were 18900 including vat, spray foam insulation was 7000 including vat, doors were 2000 including vat, the shed was already there so didn't have to buy that.

That is one issue I had with mine, took a longish time to get down to 3 degrees from 15.Panels are panels (within reason), but can be quite a price difference for the fridge. Depends if you are putting produce in cold or warm, weight of produce (big factor), produce from whole store rotated daily, etc.
Someone who is used to building supermarket cold stores will be expecting goods in at 4°C. They aren't used to calculating cooling requirements of field temp produce, so watch for that. They start scratching their heads.
We've just installed one for a herb grower. He wanted a vacuum cooler really, but was just starting up in business so compromised with a cold store.
There are second hand panels available, but availability depends on what height is required. What height pallets are you on?

Can be done quickly if you're prepared to spend on kit and have plenty of power. Might stand corrected when I speak to bro tomorrow, but think he built a machine to take 20 tonnes down from 25°C to 4°C in under 30 mins. It does use a bit of electric!!!
He was in Amsterdam last week. 800t of flowers a day to cool iirc.

We don't do spuds, but presume that'll work fine?300 ton potato store. Takes about 2 weeks to get them down to where I want them. But was told at college years ago to aim for 0.5 degree a day so maybe not doing too bad.

It's a big consideration. Chap has a system (not built by us) with fridge kit at one end of a big building, but evaporator at other end. Refrigerant leaked out and cost £12k for the gas.
