Different products have very different perceived “known values” to the customer (nowadays considered to be a consumer, rather than a customer).

Exactly, it’s returning customers who create a successful retail business - And it can be a fine balance .
I built up a doorstep milk delivery business from the late ‘70’s of 4000 pints per day from my own herd but once the supermarkets got the big dairies in their stranglehold and plastic throwaway packaging became acceptable, well, the rest is history.
