Finding someone milking highlands will be a rarity!
There was some guy from Cornwall once on here who claimed he could milk Belted Galloways!🤣🤣
But we never heard from him since.

Looking at your name I guess you are wanting to make some specialist food.
Your best bet would be to find a local dairy farmer, near to Biggar, source what you need and sell the local story.

The Highland and islands can surprise you. My neighbour in the Uists used to tether his cow on his 1/2 acre croft so he didn't have to worry about fencing! :LOL: Highlands certainly would have been milked in the past as well as kept for beef. If the OP is looking for rich milk, there are better breeds. The thing is, would Highland milk be any different in quality or analysis?
