Highland cow milk

Hello,

I don’t work in agriculture, I’m a chef looking for a specific product. I am looking to start a small project where I produce homemade brie cheese made from the milk of highland cattle as an additional course on my menu. The richness and sweetness of the milk would be wonderful not to mention a real unique selling point and a great thing to learn. Could anyone tell me if there is anyone producing this milk which I could buy or help me to establish a supply?

I think you'd be lucky to find someone milking Highland cattle in sufficient volume to get enough for making cheese as an ongoing production. Not saying you won't, but you'll be lucky if you do!

Highlanders are not a high milk yielding animal but they were kept traditionally as an all round cow so were milked back in the day.

Most are relatively tame so can’t see why they wouldn’t train, I wouldn’t fancy it myself.

Achinreir make highland coo ice cream, so would be worth contacting them
