On farm Processing

I'm researching an element of on farm milk processing so i can supply local school with milk. According to the regs in place concerning milk sales in schools, i must provide semi skimmed milk.

Even through a vending machine..

So there seem to be a number of different ways to produce semi skimmed milk..Is there anyone on here who runs an on farm dairy and produces semi skimmed milk?

I'm not planning to make industrial quantities.. probably max 300 litres a day if the machine is popular but don't want to be handling the product excessively.

Current (planned) set-up is Milk in from tank..pasteurised, cooled, then pumped into vending machine tanks.. Obvs i'd have to have a seperator and a blender ? somewhere in the line? Can a seperator be set up to produce a specific percentage? Is this done warm/ hot or cold .

Total newbie.

Why must it be semi. not another of your Welsg gov wonderful ideas ??
We have schools taking whole. Far better for kids.
Approx proportions to make semi is 30 % whole 70 % skim..
Or you add some cream back to the skim
As regards kit to separate, all depends how much you want to spend. Cheapest will be an elecreme type machine. Maybe About £4 k. In line 1000 litres hour machine £16k
It is possible to set a seperator up to produce semi.( the more expensive sort ) We just mix it in a tank.
Charles Wait usually has s/ h available. Usually advertised in fg. If you can not find it I can DM his details

When planning your set up remember milk seperates better when warm, 40 to 60 degrees C

Absurd nonsense.. and it is advice.. but statutory advice...

There may be a way around it. Perhaps I can DM you and we can discuss the lessons you have learned and the formats that you supply to schools? ie bulk vend or bottles, primary or secondary schools..?

I would really rather not fork out for a seperator and the entire reason i approached the schools/ council was to offer a no strings trial to a large secondary school in an attempt to reconnect children with local food and proper tasting milk.. (full fat , non homog etc)..

However it seems that the sytem is rigged to ensure children don't get access to local milk, letr alone decent tasting non hom milk..

And the schools canteen will be selling rubbish.

Do you really think the kids are going to voluntarily buy your milk over a can of soft drink.

Join the rubbish food bandwagon add some sugary syrup full of colourings and sell them milkshakes and you maybe on to a winner

I plan to have syrup dispenser.. for flavouring the milk.,BUT the regs require the flavouring to be less than 5 % sugar..

Naturally all kids get offered at school is rubbish.. that is a given when you plan a menu by making iot the cheapest possible..

Precisely why i wanted to offer the trial..

You could get a cheaper continuous pasteuriser, a mallinson will be less that quoted above, but they are getting on a bit! Colsan down in kent sometimes have them in, and can update them for digital control and chart recording.
You might find a second hand elecrem too.

Although as said, ideally just supply whole milk.

Looks like an up hill struggle getting past the rule book :mad:

Best chance would be if the head of your secondary school was prepared to think outside the box. Don`t think most of them are trained to do that

School milk is a tiny part of our business all poly bottles. Some through a 3rd party called Cool Milk who draw the gov sub & some direct.

We sell our milk for £1.20/L in the vending machine or 80p for half a litre
Add in the cost of a bottle and the syrup and a milkshake will cost £3.95 or £3.10
Disposable cups are cheaper obviously, last time we priced them they were 20p each I think
 
I found some interesting wording in a document issued to all schools...

There is an opportunity to justify no diggerty , no doubt!
