Last time I needed some (years ago), I arrived at my local stainless steel fabrication workshop at 5:00 on a Friday afternoon with a small box of his favourite cold alcoholic beverages in one hand and an empty plastic jar in the other hand.

What are you doing that requires pickling - dairy? Otherwise in general we just brush the weldburn off with wire brushes or scotchbrite poly discs.

We tend to use a phosphoric acid solution and an electro-passivator these days, it's far safer and faster than pickling paste. You can make a passivator machine for under £50, although the "proper" ones are ruinously expensive.

Any clues ? :D

I used my TIG set at min amps last time, but it wasn't a true 5 amp output as it was on lift-TIG, so it crackled and banged a bit too much. A 3-5 amp output at 12-15 volts would be ideal. Then you just need a holder for the carbon brush, and some phosphoric acid or other solution.
