I do some work for a veg grower and they have jones bedformers with the same roller. They do thousands of acres and not seen one worn down as far as that.

But yes a roll of hard face wire or hard facing stick electrodes if you have a stick welder too. Both very capable.
Depends what you do with the bench. My benches are heavy steel top and I am always tacking and welding things to the top for mag drilling or straightening.
If you aren’t planning on any welding on the bench then yes wood may be ok. I like steel though as it can be polished clean with a flap...
