Every time I've been to rural Waitroses since it started the vegan range, there's been a higher number of that range of food in the reduced section than anything else. Much more than the OP photo. Can't comment about the city ones.

Some will be perfectly good side dishes or accompaniments, too, but aimed to the wrong market.

Noticed that M&S has had a rethink on quantities in its food with plants in range. At least that's how I perceived it.

M&S has been very clever with its branding, calling it plant kitchen rather than vegan.
Stops it being divisive.

also, I believe that the perceived explosion in vegan numbers is basically vegetarians swapping to vegan diets.
I think the numbers changing from omnivore to vegan can be counted in the tens of thousand rather than hundreds of thousands.
