Gluten intolerance linked to seawge cake application

Has anyone else heard this and if so where is the information?

Taliking tonight to a doctor who mentioned the use of sewage sludge and a certain bacteria which carries over and potentially is causing a rise in gluten intolerance?

First I have heard of this bug would be interested to know if anyone else has heard similar

Over cautious milling and malting contracts exclude it
Digested cake has been through a AD plant killing 99.9% of pathogens and bacteria, the bread is cooked too
Chorley wood process is more likely to be a factor in gluten intolerance

Which bacteria is he referring to? Can he back up his claims.? Most of our milling wheat has come from Germany this year, perhaps German milling wheat is bad for our health and should be banned.

I wouldn’t necessarily say that a cautions approach is necessarily “over cautiously” in terms of their industrial bakery businesses.
I do agree that “modern” and “efficacy” baking processes are more likely to be the actual cause of gluten issues.

Yes you are unless it specifically says so in any contracts you have. Think about how far away from the end product the sewage sludge is. How any 'bacteria' could end up in a loaf of bread i would of thought is almost impossible!

Then think about the massive advantages to the agricultural industry amd wider environment/economy using sewage sludge has

Strangely I was just talking about this yesterday re milling wheat contracts - I can't grow gp1s for a "major UK bread maker" on contract to my local store if I use digestate ......which is a shame as next to the store is an ad plant which is used on many farms around it. So that's that.

Agree it's all on forward contracts. I'd bet a fair chunk of wheat going in to mills (wheat, oats) achieves the same price without a contact despite using sludge / pgrs etc.

It's all perception and trend, although I'd guess it was more microplastic and "animal derivatives" from the vegan lobby than bacteria.

Humans can't digest gluten full stop. Never have done, we all have varying degrees of intolerance.
I guess tens of thousands of years of humans eating grains were for nothing (sic!). Definitely evolution didn't do its thing, same with lactose digestion.
But please tell that to harvard folks. I bet they will listen to your opinion and change science to support your claim.
