What's happening is as the straw is being pulled through by the roller the engine is dying and I'm having to stop the bed quickly and allow the tractor to recover i.e get rid of the straw that's in the fly wheel and go again. The tractor is all but stalling sometimes it seems like it is definitely going to stall but doesn't quite. Is this likely to be the slip clutch on the way out or an issue with the tractor pto or what? Any ideas please?

Check everything's free to turn by hand. See that the blade in the chute is sharpish with minimal clearance, and there's nothing daft blocked in there.
If it is tight to turn, take out the shearbolt to split the feed rotor drive from the flywheel.
It won't be the slip or pto clutch if the tractor is dying.

Well doesn't do any other jobs involving a pto but we've been using it to pull a dump trailer this week 10 tonne if stone and it's been fine on that job

Well yes the roller that the blades are attached to not sure on the technical name not very machinery savvy as you may have guessed haha
Sounds like you need some more HP on the front of it.
Same tractor has worked it fine for the last 2 years

Might just be that the straw is extra dry or broken this year and feeding through faster but have you another tractor to try it on?
Would let you know whether it's the tractor or chopper.

As @e3120 said above,have a look at the shear blade inside the chute. Our McHale was doing similar last year, adjusted the knife so it's as close to the end of the paddles as safe. Hasn't come close to blocking since
