maybe you could just Dna any animals you wish to keep/sell for breeding.
how big a group of females are you looking at running?
As others have said maybe work a bull then rest him whilst other works for a 2 - 3 weeks.
Probably 50-60 cows in one bunch and another 30 in another group.

The larger group is probably too big for one bull to handle, I would think. So which is better... one bull at a time and rotate or two bulls and DNA test? Trying to keep calving block to 10 weeks.

Would say even if you rotate bulls you are going to have some DNA'ing to do. eg cow going late or calving early.
could you not even the group sizes up?

i would say keeping compact calving is key, so just DNA any calf you wish to retain or sell for breeding. not perfect but i dont see you are doing harm with the predigree.
In the Limousin breed every breeding animal coming through male or female so you gotta do it at some point, and gives you the chance to look at the Myosatin genes on the tests.

if the two bulls you have together, they may start to show some characteristics by 3 weeks old.
